4 Chicken &MushroomPie hic en &MushroomPie “For me, there is nothing better than a freshly baked pie just out of the oven. Chicken and mushroom is my number-one choice of filling, so much so that on my birthday each year I bake this pie to go on my birthday table. And when it's on the dinner table, I'll even skip dessert to have another piece. It's that good”. Fatima Sydow. METHOD 1. Preheat the oven to 200 °C. 2. Heat the olive oil in a pan over medium heat, add the onion, nutmeg, garlic, English mustard, salt and pepper and fry for about 4 minutes. Add the chicken, dried herbs and mushrooms and stir-fry for another 8minutes. 3. In a jug or bowl, mix the cornflour and milk or fresh cream. Pour the milk mixture into the chicken and mix thoroughly. Remove from the heat and set aside to cool completely. 4. Cut the puff pastry into rectangles. Fill with the cooled chicken mixture. With a little egg wash, paint along the edges of the pastry, fold the pastry over and press down the sides with a fork to seal the edges. Cut about 3 slits in the top of each pie to release the steam. Place on a greased baking sheet. Brush with remaining egg wash. Bake in the preheated oven for 25minutes, or until golden brown. TIPS • You can make one big pie or 15 to 20 round or square cocktail-sized pies. • Use 2 x 400 g store-bought puff pastry instead of making your own.
